Cara Membumbui Ayam Bakar

The WORST EVER PLACE!

The WORST EVER PLACE! 1. the food is very dirty & has sand. I saw them drop the chicken on the ground in the street & take it back to the grill. 2. we found sand on the chicken 3 times before & only knew why after seeing them drop it on the ground & serve it to others today. 3. The workers are unprofessional & lack any sense of customer satisfaction & rights! 4. extremely long waiting time, almost 1 hour without even starting our order! 5. The parking guy just entered the kitchen & started touching all the food to pick his free food...touching all the food with his hands!

NEVER AGAIN!!! EVER EVER!!!! FOR SURE!!!!!

“Praktis bumbu mudah diingat”

Welcome to my travel series. If you guys have been following me on Instagram, I recently spent a month in Bali and fell in love with Ayam Bakar, a grilled chicken dish marinated in sweet soy sauce. Today, I’m excited to share my interpretation of this favourite dish.

This delicious dish, which translates to "grilled chicken" in English, is a staple in Indonesian cuisine and is known for its bold flavours and mouthwatering aroma. Although it means ‘to grill,’ it’s bloody freezing in London, and the best version I ate of this in Bali was seared in a pan soooo that’s what I’m going to be doing!

The key to making the perfect Ayam Bakar is marinating the chicken and then grilling it to perfection. The result is a juicy and tender chicken that is packed with flavour. Whether you're a foodie or just looking for a new dish, I highly recommend giving Ayam Bakar a try. So, fire up your grill and let's get cooking!

Indonesian and Malay style grilled chicken

Ayam bakar is an Indonesian and Malay dish, consisting of charcoal-grilled chicken. Ayam bakar literally means "grilled chicken" in Indonesian and Malay.

Marination and spices

In Java, the chicken is usually marinated with the mixture of kecap manis (sweet soy sauce) and coconut oil, applied with a brush during grilling. The bumbu spice mixture may vary among regions, but usually it consists of a combination of ground shallot, garlic, chili pepper, coriander, tamarind juice, candlenut, turmeric, galangal, and salt. In Java, ayam bakar usually tastes rather sweet because of the generous amount of sweet soy sauce either as marination or dipping sauce, while ayam bakar Padang, Bali, Lombok, and most of Sumatra are usually spicier and more reddish in colour due to the generous amount of chilli pepper, turmeric and other spices and the absence of sweet soy sauce.

The chicken pieces are usually partially cooked in the spice mixture using a small fire prior to grilling in order for the chicken to absorb the spices. During grilling process the remaining spices are applied upon the chicken. Ayam bakar is usually served with sambal terasi (chilli with terasi) or sambal kecap (sliced chilli and shallot in sweet soy sauce) as dipping sauce or condiment and slices of cucumber and tomato as garnishing.

There are many recipes of ayam bakar, among the popular ones are Padang-style ayam bakar, Ayam Percik and Ayam Golek from Malaysia, ayam bakar Taliwang of Lombok island, Sundanese bakakak hayam, and Javanese ayam bakar bumbu rujak (grilled spicy coconut chicken).[2][3] Usually, the chicken is marinated with mixture of spice pastes, sometimes kecap manis (sweet soy sauce), and then grilled.
